Absolutely! Eco mode does not change any gears that would cause a problem. It tells the car to regulate how much power the A/C can use and to adjust the settings on "gas" pedal to create a more aggressive regen of power. Many people switch between Eco-Drive often. Some even switch into Neutral as well while moving.
