I'll start. There's a 10-parter "The Center Seat — 55 Years of Star Trek". I posted about it at https://www.tivocommunity.com/community/index.php?threads/the-center-seat-%E2%80%94-55-years-of-star-trek-all-episodes.585455/.

You can watch the 1st 4 eps (1st already aired but being rerun) on History Channel. The rest will be on History Vault, a paid service.
 
I just finished watching the 3 ep on Phase II and TMP. I posted about it at https://www.tivocommunity.com/community/index.php?threads/the-center-seat-%E2%80%94-55-years-of-star-trek-all-episodes.585455/page-2#post-12435221. That was a really good ep.

It's kinda strange to have Gates McFadden narrating. I asked her at a convention (started question off wrong) about whether she'd watched Chaos on the Bridge and she answered no. Was something like she doesn't watch Trek documentaries. My real question (how I should've asked it) is whether it was as chaotic on TNG in the 1st 2 seasons as Chaos on the Bridge depicted. Oh well.

I did ask Frakes something along those lines and he said it was tough at the beginning. They were still trying to learn their characters and the way things should be.

I have a deal from Roku for some channels including History Vault for only 99 cents/month good for 2 months. The deal ends up in about a week so I guess I'll subscribe to that channel/service to catch more/all of the remaining eps.

Today, I stumbled across the whole show being available for free on the Roku Channel on my Roku Ultra. Not sure if folks w/o Roku boxes or sticks can see content there.

https://www.imdb.com/title/tt15766736/episodes?ref_=tt_eps_sm lists 11 eps so I'm confused now. I thought it was only 10 (memory foggy). I'll have to see if there was an ep I missed.
 
I can handle Roku, so I'll check that out.
If you are interested in the timeline/history of Star Trek, you should checkout the books 50 Year Mission (they come in 2 sets of 25 years); sometimes you can buy them together as a 'deal' on Amazon kindle.

Update: I've started on it and I'm pretty sure I've not seen it before. So, I guess that guy was right.
Update 2: I definitely hadn't seen it before. It was good and covered Star Trek IV, V and VI + briefly touched on Generations.
Update 3: TIL that it looks available on Amazon Prime video. I'm not a subscriber so it doesn't help me.
 
This isn't really a documentary but I stumbled across https://www.youtube.com/watch?v=WkAKGs_yXHE recently. The interviews and behind the scenes were all from S1 of TNG.

Got a push alert for https://www.yahoo.com/entertainment/center-seat-55-years-star-124448224.html saying it's on Peacock.
