Your math is flawed because the Leaf's computer already takes this into account and does not allow you to use the maximum capacity of the battery. So just because the graph on the dash says you are at 0% or 100% doesn't really mean you are at this state-of-charge. The Leaf instrumentation only shows the user the portion of the battery to which they are allowed to use inside the safe window. The EPA rating reflects the safe window of usage.
